I have a horrid 2nd degree burn (a spring form pan exploded) and may end up doing hot dogs for next week's "cakes."

This week's theme is Cinco de Mayo, celebrated a bit early.
Low-carb quesadillas (1.5 carbs per wedge--recipe below)

Salsa with limes (see below for recipe)
A lime-edged rose from Publix!
Melon (I was going to make a watermelon salsa, but the wedges looked so fresh and delicious, I decided to leave well enough alone.
Low Carb Quesadillas
1 bag low carb tortillas
cheese (whatever is in the fridge)
oil/butter
Melt butter in pan (start with 1 T) and add a dribble of oil. Place tortilla in pan. Sprinkle with cheese.
Place tortilla on top of cheese. Gently "fry" until the tortilla starts to brown.
Flip. Add another pat of butter, if necessary. Serve with salsa, etc. Cut in wedges.
Best I can figure, each wedge has approximately 1.5 net carbs. I used La Tortilla Factory tortillas, and each tortilla only has 3 net carbs; but I used two per quesadilla. The cheese has 1 G carbs.
Avocados are low in carbs--after you've gone through "induction," you can feast on them without fretting. To make "chips," fry low carb tortillias in a little oil, and cut into wedges.
Low-Carb Guacamole
3 ripe avocados
fresh lime juice
1 cap extra virgin olive oil
Duke's Mayonnaise (eyeball it--add by teaspoons; mix and add more, if necessary)
garlic salt
Tabasco
Peel avocados. Pour 1 cap (scant 1 tsp) olive oil onto avocadoes. Mash with fork. Add lime juice (1/4 lime), garlic salt, pepper, Tabasco, and mayo--to taste. 1 carb per 3 tablespoons
Pico de Gallo with fresh lime
Pico de Gallo
2 cups ripe tomatoes, diced
3/4 cup red onion, diced
5 jalapenos, chopped
3 cloves garlic, chopped
3 tbsp chopped fresh cilantro
2 tbsp salt
Dice tomatoes and onion.
Chop garlic, peppers, cilantro.
Add 2 T fresh lime juice.
Refrigerate 5 hours.
Variations :
whole kernel corn

I've had the blue "thumbprint" bowls for decades. The butterfly plates came from Big Lots.
Remember these boxes? Big Lots!
The square blue plates (and butterfly plates) are from Big Lots. So are the blue placemats. I've had the napkins forever and can't remember where I bought them!

Holy Mother of Mercy, g, that tose in the second opicture takes my BREATH away! Do you know what it's name is???? I had roses at my other house, about 30 bushes and have never seen one like that with the GREEN edges! GORGEOUS!!!!!! I love your Big Lots dishes.....I had planed to go there tomorrow so will keep my eyes open for more dishes.....between you and Linda "inspiring" me, I am gonna be in the poor house:):) Love, Pinky Beautiful post!!!!!!
ReplyDeleteHi Michael! This salsa looks very tasty! I had some authentic salsa made from a friend visiting from AZ recently, she insisted she make me fresh Mexican Salsa from her home country. Yowza...it was good! Your table and food look wonderful as usual! I had low carb ice cream with hot fudge sauce for dinner :)-husband out of town! So sorry about the burn--they hurt so! Hope you feel better soon!

ReplyDeleteAnd girl, that table is fabulous! Love the square plates (that butterfly one is darling), the bowls, the boxes, the glasses, the linens... the food! Great tablescape, and now I'm craving salsa. Unfortunately, Publix closed about thirty minutes ago.
I'm still on break, but I'll be thinking about the trainwreck offering. The problem is, I don't have a picture of our most famous trainwreck, but it was an amusing story. I don't know that I could even recreate it, but I could try. LOL!

The salsa looks wonderful! Hubby wants a good recipe! We have not made one we like as of yet! The table is so pretty! Now Big Lots does not have the Butterfly plates here! I finally got to go and no Gibson dishes to be found. One of my sets for everyday use,are blue sponge plates whch are Gibson, I had them for years and no breakage! I did by two boxes of total of 64 pieces of white dishes, called a Family Gathering. Yes one box had broken ones and they only had one box left! I finally got back and traded out for a new box and checked it in Big Lots for breakage. I can't wait to show them. I have been working on my dining room and so happy to have finished walls! I promised Hubby no more dishes to buy unless they are some of my collection pieces, I been buying dishes like mad since Dec. Now, I was suppose to wait to buy sheep, after I get through this next year of surgeries. I found some in the Market Bulletin, around 45 min. from here! I was the first one to call and he said his buddy was going to get them. I was so disappointed, he said he would call the buddy and he did and I get to buy the sheep. They are registered Gulf Coast Sheep. I saw these sheep on a sheep farm in Quincy,LA and loved them. I have wool from them I am spinning. I getting one ram, three ewes and two lambs! Going to pick them up this weekend. I am so excited! I just had to tell you! PS Hubby thinks I am only getting two! lol But its a package deal all six for one price! Love the flowers!

OMgoodness the salsa looks so delicious. I finally went to Big Lot and all because of your beautiful tablescapes. I think I need to go to out your way. I stopped at the one off of Charlott e and no bueno. I did pick up a couple of very inexpensive candles. I have an affliction where I can barely walk out of a store without even the smallest purchase.
