Foodie Friday: Triple Brownies


Oh, it's Foodie Friday again! Grab some index cards, because you'll want to write down some of the lipsmacking recipes that bloggers have cooked up for you.

I made triple brownies this week, and they didn't last long.

It's hard to improve a brownie; but sometimes the palate cries out for layers of sugar and gooey goodness.

Triple Brownies
1 box brownie mix
buttercream icing (canned or homemade)
semi-sweet chocolate chips
1 stick butter

Bake brownies; cool. Mix buttercream icing and spread over brownies. Pop the brownie pan into the fridge while you prepare the top layer. Melt 1 stick butter and add chocolate chips. I don't have a double boiler, so I improvise by putting a a pyrex bowl over a pan of gently boiling water. Blend the chips until smooth. Remove brownies from fridge and quickly pour melted chocolate over the buttercream icing layer.

I had terrible luck when I put this into the fridge. While the brownies did "collect" themselves, the top layer cracked. So, just put the pan in a cool place, covered, and wait for the chocolate to harden, or go ahead and cut a huge, gooey slice.

O my gosh, Michael...these look so devine I could eat the whole, entire pan! It is 9:00 here and I may just have to go to the groc. store for ingredients. And, your skill in photography also makes EVERYTHING even more delicious looking....ummmmm

Gooey fudgy brownies are the best -- I cook mine until you can smell them, then take them out -- best made the day before -- fudgy not caky.

Your brownies remind me of a little treat I used to buy at a bakery in Baton Rouge called Devil Fingers. It was devils food, but a similar concept..with butter cream on top then covered in chocolate. They were sinfully good. I have vowed to recreate them one day...

(By combining a number of recipes I finally came up with a 'white' brownie that is sinfully delish and is one of family favourites. Took me forever to perfect it.)
