It seems like I've been dieting for the last two thousand years, and during that time I strictly avoided avocados. Supposedly they had calories galore and would pack layers of fat upon an unsuspecting dieter's hips.
Now, of course, low carb dieters everywhere enjoy avocados. You can slather on mayonnaise and oil without fear.
Low Carb Tortillas
Spray a non-stick pan with Pam. Turn up the heat and add a low-carb tortilla. Cook on both sides till crispy. Remove to a platter. Using a pizza cutter, divide the tortilla into "chip" like wedges.
Rinse, later, repeat until you have a whole bunch of chips.
3 ripe avocados-- peeled, pitted, and mashed
mayonnaise
garlic salt
pepper
Tabasco
extra virgin olive oil (about 1 cap-full)

Pat, that's a good idea. I love grapes but no longer buy them. I used the last of the raisins in cupcakes...I won't be buying any dried fruit, either. Mister is just like me--no self control when it comes to forbidden foods.Last summer he nearly died after he climbed onto a table and ate grapes. He ended up in an emergency hospital after a local vet emptied charcoal into Mister's lungs (then the vet doped up my poor dog on doggie Valium, thinking Mister was "nervous," as opposed to asphyxiating).

Oh, so sorry you have had asthma attacks! My 5 year old had his first this AM.:( My 15 yr. old has them too, so I was prepared. No fun. Love guacamole, yours looks fantastic!

ReplyDeleteGuacomole is a favorite of mine. I often take a shortcut and just mash the avocados with a little salt and pepper and stir in a big spoonful of salsa...easy!

I love guacamole, and try to eat it only a few times a year. I love it too much! This week I made "Jimmy's Pink Cookies", but gave them all away so I couldn't eat them. I hope you are feeling better soon! And yes, get a new vet. Kiki's vet is awesome, but we're in New York so it would be a bit of a drive :-)
ReplyDeleteMichael, I eat an avocado a couple of times a week it seems. They say it is good for you! I adore guacamole, but usually just eat my avocados on a sandwich or in a salad.

ReplyDeleteWonderful recipe for guacamole and chips. I love, love, love guacamole! But, I too, stay away from it because of the chips. These sound delicious and decedent and something that would be satisfying- and satisfying is the key for me.

Here in the South since we had a colder winter I think it was good for all the trees producing all the pollen. It seems here that the pollen is lasting longer and there is more of it. I will be sooooooo glad when we get past this pollen "thingy". I'm sure you will too. Take care.
