Foodie Friday: Grilled Salmon with Strawberry Salsa

On a hot summer night, try grilled salmon with strawberry salsa.

I marinated the salmon in Ken's Lite Raspberry vinaigrette. Bandwidth grilled. The secret to the grill marks (Bandy says) is to make sure the grill is hot, at least 400 degrees. I didn't ask how he figured this out (didn't see any burns).

Strawberry Salsa
Strawberries
Papaya or mango
Pineapple
Green onions
lemon juice, vinegar, Splenda

I've never tried GRILLED salmon but I sure would like to give it a try. The salsa looks absolutely delicious and would make a great "MIXER" with the salmon.
'
My family wouldn't be one bit "BLUE" if I served this one night.
I have no idea how long to grill a salmon steak...??

That looks and sounds FANTASTIC, Michael Lee. How lucky you are to have Bandy to cook for you when you are busy with your writing...he enjoys cooking, and he's obviously very good at it! Your strawberry salsa was the perfect accompaniment to the salmon - YUM!

The salsa looks and sounds wonderful (thanks for sharing the recipe), but I have to admit I will pass on the salmon. I have tried salmon different ways and just do not care for the taste. I have never cared for strong fish or strong cheese.
This heat is unreal.

I made your strawberry salsa tonight, it was yummy - really jazzed up the grilled chicken I'd made and made for an elegant dinner, plus I've got leftovers for lunch tomorrow.

All I needed was a cocktail, but I was all out of mixer :D

My friends and I are getting together over Labor Day weekend for a mixer.... well, more of a potluck dinner (LOL) and I plan on bringing this strawberry salsa recipe. I'm also thinking of maybe trying some variations, like peach, or mango... even pineapple which I've had before and loved! I think it'll make a colorful presentation, especially if I can find some Carribean blue bowls to serve them in :)

I made another batch of salsa today, this time I added a jalepeno from my garden - a little sweet, a little heat, it was even better than the last batch! I'm not even a fan of strawberries but I'm loving this. All I needed was a margarita (or 3) - I should pick up some mixer tomorrow.

(that wasn't too obvious, was it?)

I started a slow-roasted pork today, thinking about making a version of this salsa using pineapple and a little jalepeno, and serving it with soft corn tortillas for dinner tomorrow.

Also, the Enya song Carribean Blue came up on my Pandora today - the first thing I thought of was this post. LOL If Cement Mixer comes up, I'm taking it as an omen!

My pork and fruit salsa came out yummy :) I was thinking about either pineapple or mango - I settled on pineapple because the mangoes didn't look great, plus I thought it would cut through the richness of the pork better than the mango would.

My son went back to school with a full stomach, several pounds of roasted pork and a large container of pineapple salsa. I am left to clean up, and dream dreams of a Kitchenaid mixer and Carribean blue Le Creuset saute pans :)

I received a Target gift card in the mail today, so I was surfing their site admiring the Kitchenaid mixers..

they have cornflower blue, cobalt blue, blue willow, ice blue but no carribean blue :(

I saw a pretty carribean blue butter bell today, and thought how great it would be to make homemade butter in a Kitchenaid mixer and store it in my own butter bell :)
