Foodie Friday

I love picnics.
The simplier the better.

Even if you aren't traveling far, picnic food must be easily transportable. A glass jar is the perfect container for a walnut-apple salad.

Pile everything onto a large tray and join me in the front yard.

Dinner is at six.

Croissants, ham, and cheese.

A vintage beverage carrier, plastic cutlery, melon.
Paper plates and a vintage tablecloth. Why not?

Raspberry vinaigrette.

I'm linking to Susan at Between Naps on the Porch for Tablescape Thursday. If you are looking for tabletop ideas, Naps is like a weekly virtual magazine, filled with gorgeousness.
You can still enter the KitchenAid mixer give-away, which ends September 1st. Just leave a message and work in "KitchenAid." Details are on the sidebar or you can click HERE. There's also a terrific Le Creuset pan give-away on
FACEBOOK.The contest ends September 1st.
Look for an upcoming apron and tote bag give-away, courtesy of the talented Jackie, "Just a Dreamer."

Foodie Friday: Picnic

I love picnics, old Adirondacks, and vintage tablecloths.
Salads are the perfect picnic food--easily transportable.

A decorative "beehive" to cover food.
Polka dots and plaid.

Fruit and blueberry scones are also easily transportable.
What are your favorite picnic foods? Do you have a favorite picnic memory? To see more tablescapes, check out the 104th Tablescape Thursday.

Epic thunderstorms passed through last night, and our internet is spotty today. I'm posting Foodie Friday early, just in case we lose wireless again.

Foodie Friday: Grilled Salmon with Strawberry Salsa

On a hot summer night, try grilled salmon with strawberry salsa.

I marinated the salmon in Ken's Lite Raspberry vinaigrette. Bandwidth grilled. The secret to the grill marks (Bandy says) is to make sure the grill is hot, at least 400 degrees. I didn't ask how he figured this out (didn't see any burns).

Strawberry Salsa
Strawberries
Papaya or mango
Pineapple
Green onions
lemon juice, vinegar, Splenda
Susan Ball Tyson suggested this RECIPE.
Thanks to the cursed diet, I made a few adjustments.

Be sure to add your photo and blog link to the Foodie Friday Gallery.

If you'd like to read about Dr. Big's adventures with the rooster, click HERE and scroll down a bit. While you're there, check out the Le Creuset give-away. This time, the color is Caribbean blue. The KitchenAid give-away will end September 1st; the winner will be announced on September 3rd--on Foodie Friday, of course. To enter any of the contests, leave a message and work in "mixer" or "Caribbean blue." No limit to the number of entries.

Dessert on the Porch

The side porch is my hangout.

It's the perfect place to think and write.

And eat.
Especially eat.

I've been writing and writing. And you have been right here with me during this journey. Author Nora Roberts recently said, "Writing is hard...but no one should have to ride the hard times alone."

Come sit with me a while, and we'll wait for twilight.

I'm linking to Susan at Between Naps on the Porch for the 103rd Tablescape Thursday. The link for Foodie Friday will be available at 8 p.m. Central. See you there.

Low-Calorie Peach Ice

When the mercury rises, cool down with a low-calorie peach ice.

Low-cal Peach Ice
Serves: 1 Lonely Dieter
1 can lite sliced peaches
Pour juice into a shallow plastic bowl. Freeze two hours or until firm. Using a fork, "rake" the mixture into a serving dish.
If you haven't eaten the sliced peaches, chop and add them to the liquid.

Sign up for Foodie Friday (below).
A Tutorial is available.
