This week I am sharing my recipe for a Coconut Cake that you make in your blender and then just fold in beaten egg whites and bake.
My recipe is gluten free, but regular flour can be used if you don't have an issue with gluten.
If you love coconut you should try this cake- it's incredible!

Wonderful video and entertaining preview to the book. I like peaches, fresh and sliced wth a bit of cream. I used to have a dog who curled up at my feet while I was canning peaches over 30 years ago. What a great memory.
