We've been enjoying peaches this week.

  1. The peaches have been fantastic this year. My favorite way I've used them so far is a spin on an Italian Caprese Salad. I substituted sweet Georgia peaches for the tomato typically found in the Italian version. I called it Georgia Caprese Salad. It was very pretty. A real southern treat.

  2. My all time favorite is Peach Cobbler and a close second is my Peach Shortcake. Mercy I think I need to get the peaches out and make a dessert.

  6. I'm so puffed up with the Prednisone I took for pneumonia, I will prolly fix peaches with Splenda. I will never lose this weight. We were up all night with Mister, one of my Yorkies. He has a collapsing trachea, and he was really having trouble breathing. The vet gave him a shot and put him on a breathing pill. fingers crossed. My diabetic Yorkie, Zap, is finally doing great, so that's a blessing.

  8. We've been having lots of peaches here too. I think they are perfect all on their own. Last night I had a single refrigerator pie crust, so I sliced some peaches and mixed them with a little sugar, cinnamon and flour and put them on half the crust and dotted with butter. I folded it in half and made a large "fried pie" that I baked. We cut it into 2 pieces and that was dinner...yummy!

  23. Thank you for hosting. Gosh, what beautiful photos those peach pictures are! My favourite peach recipe is not a recipe at all. We love to peel them, cut them into sections, toss the sections in a little lemon juice, sprinkle them with sugar and eat them with a little cream. Nothing better when they're at their peak!

    I've shared a different sort of recipe this week, for Salmon Meatballs with a Lemon and Herb Infused Cream Sauce. We like to keep canned salmon in the pantry and this is a particularly nice way to cook with it. Enjoy.
